The Start

…of another weekend. After finishing up with work (I ended up working later than 5!) I took care of the dog and before settling down to have some dinner, I decided to give myself a manicure, which I have not done in a very long time. I have horrible nails and was getting a little tired with the way they looked, so I added some nice bright color. Perfect for the summer.

When I was finally in the mood for something to eat, I knew I had to finish up the lettuce and squash because it was on it’s last leg. So I made another simple squash salad with chicken.

It was pretty good! I loved the mixture of tastes and the combination of warm squash and cold chicken. Now, I’m off to read a little, watch another episode of Top Gear with the hubby, and just enjoy the rest of this Friday night.  It only comes once a week!

At Least I’m Not Bored

I have to make this quick, because I’m up to my neck in work right now. Like usual, everybody waits to get things to me at the last minute and it needs to get done ASAP! But at least this is distracting me from staring at the clock for too long, hoping 5PM will come faster.

I wasn’t that hungry for lunch, but I knew I needed to eat something in order to get through the rest of the work day. I put together just a serving of Chobani Plain yogurt with a sliced gala apple for dipping. I also may have had a handful of popcorn.

Sun, Where Did You Go?

I woke up to another cloudy, rainy morning. The weather this summer has been rather unusual. Normally, it’s always at least 90 degrees or above every. single. day. This summer, I think we’ve had about only 2 or 3 days above 90? Don’t get me wrong, I’m not complaining at all! I’m not a fan of hot weather. Another thing is that we had no rain whatsoever for almost two months, and now for the past week it has been raining almost every day. I’d rather have hot weather instead of rain every day. Oh well, hopefully this will end soon, and then it can go back to being an unusually cool summer.

Today is Friday. Yay! I have some plans this weekend that will hopefully go well. One depends on the weather though, so rain, don’t come on Sunday please! I need to find a cocktail dress for the Healthy Living Summit in a few weeks! I have a few summer dresses, but none of them a dressy enough. So tomorrow, I’m hoping to have a successful shopping trip.

This morning, after taking the Kahlua for a quick walk since it looked like it was about to downpour, I made myself a bowl of Oat Bran. I added some sliced Strawberries and a sprinkle of Flax.

I’m hoping today goes by quickly. I have plans for the gym tonight, and maybe dinner out with the hubby. We may also take a trip to BJ’s this evening because we are running out of some things.

I Survived

Today, not only did I survive hours of frustration trying to make things pretty in Illustrator and Photoshop for the design project, but I also survived my first full day as a food blogger.

I would have liked to have gotten this post up a bit earlier, but I got sucked into reading the latest Women’s Running magazine. And after that, the hubby and I watched an episode of Top Gear. It’s a British show about cars, but they do some very interesting, confusing, and funny things. It’s not my typical tv show, I usually watch Grey’s Anatomy, House M.D., mostly anything on Food Network and the Travel Channel, and I’m excited for the new series, Glee, this fall. So, I was actually surprised when I found myself enjoying this show.

Anyway, enough about my evening, considering this day is almost over (and it’s almost Friday!) When I was finally ready for dinner, I was really not that hungry, so I just made a simple Chicken-Free Vegan Pattie sandwich with cheese and a little bit of light mayo, with a gala apple. I also snacked on some popcorn about an hour later, but it was in my mouth before I remembered to snap a picture of it.

To me, this evening went by too quickly! I had dinner a little after six and now it’s already after 9PM! I remember going back to my elementary school for a visit while I was in high school, and talking to my old Kindergarten teacher (she’s taught Kindergarten for over 30 years!) She said, “Enjoy the days you have now, because after high school and college, time goes by even faster.” How true that is!
